


white bean
stuffing balls
makes about 40 balls
Full of flavor, quick and easy to make, and toddler approved!! These white bean balls make for a great appetizer or to serve over pasta.
ingredients
2 15 oz. cans of great northern (white) beans
2 cups dried stuffing mix, or, sub bread crumbs
1 cup nutritional yeast
3 tbs EVOO
veggie broth
2 tbs flax meal or ground flax seeds
dried seasonings:
thyme, 1 tbs
oregano, 1 tbs
basil, 1 tbs
garlic powder, 1 tbs
poultry seasoning, 1 tbs
s&p, 1/2 tsp each

marinara sauce

Preheat the oven to 375 deg F and line a baking sheet with parchment paper.
Drain and rinse the white beans.
In a large mixing bowl, mash the white beans with a potato masher or a large fork. Mix in the dried seasonings, stuffing mix, and nutritional yeast.
In a separate small bowl, make 2 flax eggs by combining 2 tbs flax meal with 6 tbs of water. Stir and let sit for 2-3 mins until it thickens a bit.
Add the EVOO and flax egg into the white bean mix.
At this point, the mixture will still be fairly dry. Start to pour in veggie broth a little bit at time, stopping to mix as you go. You are aiming for a mixture that is just moist enough to allow you to form small balls.
Begin to form the mixture into small balls. Take a spoonful and use your fingers/palm to form a ball that is about 1 inch in diameter.
Line the parchment paper with the balls, leaving about 1/2 inch between each.
Brush the top of the balls with a little bit of EVOO.
Bake for 10-15 mins on 375 deg. Remove once golden brown and slighly cripy on the outside.
Serve with marinara and grated cheese!

These are kid friendly! Our toddler loved these with marinara sauce.
Here's the vegan cheese we used to grate over the top.
For a more indulgent variation, add in cheese and melted butter to the mixture BEFORE you bake them in the oven (and before you pour in the veggie broth).
The poultry seasoning and stuffing mix defintely gives me Thanksgiving vibes. Option to serve with gravy instead of marinara if you are feeling more the holiday vibe!
